HOW TO MAKE TOMATO CHICKEN STEW EASY

Today I’m sharing how I make chicken tomato stew, it can be made with chicken, fish or beef and is a classic dish that can be eaten with many things -parboiled white rice, beans, pasta , boiled eggs and sauteed spinach. If you interested to know how I prepare mine-Keep reading and watching!

TOMATO 🍅 INGREDIENTS & PREPARATION
*tomatoes
*red bell peppers
*Scotch Bonnet Pepper
PREP- ( tomato, red bell pepper and scotch Bonnet Pepper – chopped , blend and cooked 10-15mins)

CHICKEN 🍗 INGREDIENTS & PREPARATION
*3 Pounds of chicken
*1 Onion
*1 Tablespoon of thyme
*4 Cloves of garlic
*Ginger
*3 Stock Cubes
*1 Tablespoon of salt
PREP–Add all the ingredients and cook between 15-20mins ( separate chicken from chicken stock , set aside and fry chicken until it turns golden brown)

STEW INGREDIENTS
*Chicken stock and fried chicken
*Cooked tomato mixture
*1/2 cup of vegetable oil
*Chopped Onion
*4 Cloves of garlic
*Curry Powder
*3 Stock cubes
*1 Tablespoon of Salt

INSTRUCTIONS
Heat pot and add 1/2 cup vegetable oil, allow for 1 Minute. Add chopped onion-Fry for 1 Minute, add garlic- Stir and add curry powder, allow for 1 Minute.
Add cooked tomatoes mixture ( You can add tomato paste if you like- I didn’t include it) and fry 10-15mins until the color is deep red and the oil floating over the mixture.

Add stock cubes, salt to taste, chicken stock, fried chicken and stir. Cover and cook 10-15mins, check and stir thoroughly and is ready!
